Recipes:
This is the recipe sharing place.  Stay tuned for more great recipes. 
 
Both of my Grandparents were great cooks and I will share some of their great recipes.

Grandma Austin's Banana Bread
 
1 1/2 cup sugar
1/2 cup butter
2 eggs well-beaten
2 cups flour
4 T buttermilk ( or regular milk w/a little vinegar)
1 tsp soda
3 mashed bananas
1/2 cup nuts
1 tsp vanilla
 
Bake in bread pans, well greased, at 350 for 1 hour.
 
Icing: 
1 banana, mashed
1 Tblsp butter
1/2 tsp vanilla
Powder sugar
1/2 cup nuts

Aunt Lil's Enchiladas
 
Prepare Sauce:
Make Gravy with Crisco, Flour, and Water. 
 
Mix 3 Tablespoons of Gebhart Chili Powder in water in a bowl.
Add 1 Tablespoon of Peanut Butter
 
Add to the gravy.
Set aside.
 
Then mix together:
2 large onions, chopped
2 or 3 lbs. shredded cheese (4 cheeses)
      use 2/3 in the enchiladas and 1/3 on top
Chopped black olives (5 small cans)
2 lbs fried, crumbled hamburger 
 
Put oil in pan and get hot.
Dip tortillas in hot oil, (use corn or flour)
Dip tortillas in chili sauce
Fill and Roll
 
Place in 9 x 13 or larger Pan
Put extra sauce on top
Sprinkle with cheese
Cook til Bubbly
 
Delicious

Squash Cassarole

1 lb (2 cups) squash
1 large onion - chopped
2 cups cheddar cheese, shredded
1/2 cup milk
2 Tablespoons Butter
1 Egg - Beaten
Salt
Pepper
1 Tube of Ritz Crackers
 
Cook Onion and Squash in salted water until tender.  Drain well.
 
Add Cheese, Milk, Butter, Salt and Pepper.  Mix well. 
 
Put in buttered cassarole dish (2 qt.) and top with crackers and butter.
 
Bake at 350 degrees for 25-30 minutes.

Grandma Catherine's
Chocolate Jiffy Cake
 
1 1/2 cup flour           1 cup sugar
3 tablesp cocoa          1 tsp soda
1/8 tsp salt                 1 tsp vanilla
 
Sift all together in large iron frying pan or one you can bake in.  Make 3 holes in mixture.  Pour in 1 cup warm water, add 5 tablespoons melted shortening ( I used butter).  Mix lightly and add 1 tablespoon vinegar.
 
Mix lightly again.
 
Bake in a very slow oven.  Start at 200 or 250 for 15 min.  Increase heat to 325.  Bake 15 min. or until done.
 
Ice cake while hot.  Use 1/2 cup brown sugar and enough cream or milk to make it smooth.
 
Best to eat hot.

COCONUT CUSTARD PIE

Very Simple and Delicous
 
9" Unbaked pie shell
 
Beat 3 eggs to a foam
Mix in:
1 cup sugar
1/2 cup cream
1 tsp vanilla (or maple extract, this is best)
1 Tblsp. butter or margarine
1 can coconut ( 1 1/2 cups)
 
bake 10 min. at 400, turn oven down to 375, then bake 20 min.

HEALTH
 
          I am always looking for ways to stay healthy naturallyWe take vitamins and herbs and try to eat right. 
 
          I have arthritis, mostly in my knees, and at times this makes it hard to walk.  I found out that there are many herbs that help with this, such as MSM and Glucosomine.  Taking these every day has helped me greatly.

Religion/Spiritual
 
          I grew up on religion and going to church.  Love Gospel Music.  Love to hear good preaching and reading Christian books and watching Christian Movies.  Some of the new Christian Movies are pretty good.  I have a pastor that is a great teacher.  He is a published author and his books are wonderful.  Here are a few titles:

Scrap-Booking

          Working with all the Family Pictures and keepsakes, I discovered a fun hobby of Scrap-Booking.  This makes your photo albums so much more interesting.  Sometimes you feel like you are back in kindergarten, cutting and pasting, but when you are done, you have something you can be proud of and that generations to come will appreciate.
 
          Now, I find, you can do scrap-booking on the computer.  There is software that allows you to put your albums on the internet.  This is great. 
 
          I have been scanning all my pictures into the computer.  Haven't gotten to the scrap-booking part yet.  Still waiting for the software to come in.  It is ordered.  But just getting the pictures in the computer is so neat.  Now you can crop, edit, and protect your pictures.
 
          I was worried about a house fire and losing all my pictures, but now I can burn them to a CD and store them in different locations.  Also, it makes it easier to share them with the rest of the family.
 
          At any rate, Scrap-booking is becoming big business.  There are stores everywhere catering to this hobby.  You can get stickers, albums, paper, decorations, and now software.
 
          My first completed vacation picture album was of our road trip North to Alaska and back.  We took a whole month and traveled all over Alaska and back.  Our friends, Jewel and Dolores Slusher went with us.  It was fun to show off our great State to friends. 
 
          The album was fun and turned out very well.  It makes looking at pictures so much more meaningful.  It tells a story.
 
          Give it a try, you just might like it.
