Both of my Grandparents were great cooks and I will share some of their great recipes.

Grandma Austin's Banana Bread
1 1/2 cup sugar
1/2 cup butter
2 eggs well-beaten
2 cups flour
4 T buttermilk ( or regular milk w/a little vinegar)
1 tsp soda
3 mashed bananas
1/2 cup nuts
1 tsp vanilla
Bake in bread pans, well greased, at 350 for 1 hour.
Icing:
1 banana, mashed
1 Tblsp butter
1/2 tsp vanilla
Powder sugar
1/2 cup nuts

Aunt Lil's Enchiladas
Prepare Sauce:
Make Gravy with Crisco, Flour, and Water.
Mix 3 Tablespoons of Gebhart Chili Powder in water in a bowl.
Add 1 Tablespoon of Peanut Butter
Add to the gravy.
Set aside.
Then mix together:
2 large onions, chopped
2 or 3 lbs. shredded cheese (4 cheeses)
use 2/3 in the enchiladas and 1/3 on top
Chopped black olives (5 small cans)
2 lbs fried, crumbled hamburger
Put oil in pan and get hot.
Dip tortillas in hot oil, (use corn or flour)
Dip tortillas in chili sauce
Fill and Roll
Place in 9 x 13 or larger Pan
Put extra sauce on top
Sprinkle with cheese
Cook til Bubbly

Squash Cassarole

1 lb (2 cups) squash
1 large onion - chopped
2 cups cheddar cheese, shredded
1/2 cup milk
2 Tablespoons Butter
1 Egg - Beaten
Salt
Pepper
1 Tube of Ritz Crackers
Cook Onion and Squash in salted water until tender. Drain well.
Add Cheese, Milk, Butter, Salt and Pepper. Mix well.
Put in buttered cassarole dish (2 qt.) and top with crackers and butter.
Bake at 350 degrees for 25-30 minutes.

Grandma Catherine's
Chocolate Jiffy Cake
1 1/2 cup flour 1 cup
sugar
3 tablesp cocoa 1 tsp soda
1/8 tsp salt 1
tsp vanilla
Sift all together in large iron frying pan or one you can bake in. Make 3 holes
in mixture. Pour in 1 cup warm water, add 5 tablespoons melted shortening ( I used butter). Mix lightly and add
1 tablespoon vinegar.
Mix lightly again.
Bake in a very slow oven. Start at 200 or 250 for 15 min. Increase heat
to 325. Bake 15 min. or until done.
Ice cake while hot. Use 1/2 cup brown sugar and enough cream or milk to make
it smooth.
Best to eat hot.

COCONUT CUSTARD PIE
my children's Grandma Sutton
9" Unbaked pie shell
Beat 3 eggs to a foam
Mix in:
1 cup sugar
1/2 cup cream
1 tsp vanilla (or maple extract, this is best)
1 Tblsp. butter or margarine
1 can coconut ( 1 1/2 cups)
bake 10 min. at 400, turn oven down to 375, then bake 20 min.
